Effects of 1-MCP, Ethrel, KMnO4 and PEG treatments on Polyphenols content and antioxidant activity during Mung Bean Germination were studied. The results were as followed:1 Ethrel, KMnO4 and PEG treatments enhanced the germination percentage, respiration rate, ethylene production, seedling weight and pentose phosphate pathway. On the contrary, 1-MCP treatment reduced germination percentage, respiration rate, ethylene production. 1-MCP, KMnO4 and PEG treatments increased while Ethrel reduced hypocotyl length.2 The content of polyphenols and antioxidant activity decreased during Mung Bean germination.1-MCP, Ethrel, KMnO4 and PEG all improved polyphenols content, total flavonoids content and radical scavenging capacity.3 0.5μl/L1-MCP gave the best effects of improving polyphenols content, 0.10g/Lethrel, 0.10g/L KMnO4 and 20%PEG had lower effect, and the order was 20%PEG>0.10g/LEthrel>1.0g/L KMnO4.4 Percent HMP pathway were marked positively correlated with G6PDH activity, total polyphenols and antioxidant activity. It was showed that 1-MCP, Ethrel, KMnO4 and PEG treatments enhanced the pentose phosphate pathway, phenolic synthesis and related free-radical scavenging antioxidant activity through G6PDH activity raised. 5 The remarkable positive correlation between the antioxidant activity and polyphenols was found, which proved that polyphenols was the major important antioxidant. The method of using ABTS+·and DPPH·scavenging to measure the antioxidant capacities is convenient, efficient and feasible.6 Treated with 0.5μl/L1-MCP, 0.10g/LEthrel, 1.0g/LKMnO4 and 20%PEG increased SOD, POD and PAL enzyme activity, and decreased the content of MDA.7 Polyphenols was remarked positively correlated with, SOD,PPO and PAL activity, but negatively correlated with MDA.
