Wheat is one of the main grain crops in our country,which contains starch,protein,fat, mineral substance,Ca,Fe,Vitamin B1,riboflavin,nicotine acid and Vitamin A richly and so on.It is a new issue we appraise the wheat variety quality characters by wheat's mechanical properties.Through the machinery determining the nature of wheat,carrying on the appraisal to its quality character,which provides a new method for the wheat quality breeding,the wheat nutrition quality form and the heredity mechanism research.This method merits laid in abandoning the traditional chemistry method determination quality character time-consuming hard sledding and expensive shortcoming,establishing a wheat nature appraisal system,has filled the blank of mechanical determining wheat quality.This experiment selects 17 wheat varieties to take the experimental material in Liaoning province.First,we determine the wheat quality character,including wheat's protein content, the wet gluten and dry gluten content,the total starch content,the amylase content,the bulk specific gravity,the weight of a thousand seeds.Then we use the electronics of experiment machine,each variety selects 30 grains of wheat to take separately the identical experimental group to carry on sheering and crushing experiment.Because wheat's outward appearance structure is irregular,we divide the wheat to two groups.One group is put with their furrows down(in experiment to be calledâ… model),we choose identical span wheat to test;the other group is put with their furrows on one side(â…¡model),we also choose identical span wheal on this direction to carry on the experiment.Each group also respectively is 30 particles of grain. Then we determine completely wheat kernel anti-shearing force and anti-crushing force separately.Next,wheat are milled,we use electronics of experiment machine to determine stress relaxation characteristics of wheat dough,obtain the relations which between wheat quality character and mechanical properties through the SPSS software analysis.The experiment shows that wheat kernel is laid on I model both in shearing and crushing test,the rate of beam descent is 1mm/min,the anti-shearing force of different variety exists remarkable difference,the anti-crushing force of different variety exists remarkable difference too.The correlation coefficient between anti-shearing force and the protein content is 0.8853, there exists positively and significantly correlation with them,the higher the anti-shearing force,and the more the protein content.The anti-shearing force also has significant positive correlation with the wet gluten and dry gluten content.The correlation coefficient between anti-crushing force and the protein content is 0.9332,positively and significantly correlation with them,the higher the anti-crushing force,the more the protein content.The anti-crushing force also has significant positive correlation with the wet gluten and dry gluten content. Either anti-shearing force or anti-crushing force is an evaluation index on wheat protein content and gluten content.The wheat dough stress relaxation time has significant positive correlation with protein content,so we can through determining one kind of wheat dough stress relaxation time to evaluate its wheat protein content,the longer the stress relaxation time,the more the protein content.It is a new method that we determine wheat mechanical properties to evaluate some quality characters of wheat preliminarily.
