As one of the rarely mushroom produced in hot summer, Clitocybe maxima is welcomed for its rich in nutrition and special flavor. Its planting area expanded in recent years. As far as it planting in Zhangzhou in 2008, its output turns out to be 130 million bags, which equals to 325 million tons. This article starts from the existent actual problem in the production of Clitocybe maxima, combines the climate and environment and natural resources in Fujian, shows us how to realize the high yield and annual production with additional value and reduction of pollution of disused bags, that's use suitable wood chip instead of cultural resource, elevated temperature with air-stove and explore highly additional value in the stem. It also did some research in annual cultivation and process techniques in stem, which provided us scientific evidences on annual industrial production in large scale of Clitocybe maxima and accelerated the highly additional value of stem.1. Cultivated the growth of mycelium with PDA, and then choose one Clitocybe maxima which mycelium grows better in 3 which are introduced from Huazhong Agricultural College.2. Because of the contradiction between the forest and the mushroom that exists in mushroom industry, we studied the planting technology of Clitocybe maxima that wood dust replace by dead wood of Banyan, corn straw and rice straw. The results showed that wood dust (accounting for 60% of the total matrix) can completely replace by corn straw and dead wood of Banyan in planting Clitocybe maxima. When wood dust replace by corn straw and dead wood of Banyan in the planting, there are no differences (P> 0.05) in biological efficiency with CK , and the biological efficiency even enhance 3.91 and 3.32 percentage points.3. A comparative analysis of the differences in Clitocybe maxima Tradition Planting Model of Zhangzhou . The results show that planning ModelⅠ(Xiangcheng) is minimum cost ,but its living contaminants rate is highest and production benefit is low. This planting model uses the waste bagasse , instead of sawdust which used the most widespread in south fujian, the amount of sawdust only 20%,it plays an important role in relieving the contradiction of'fungi and forest'ModelⅡ(Nanjing)is the highest in biological efficiency , production benefit and also production cost. ModelⅢ(Nanjing) is better in biological efficiency, production benefi and bag yield rate,but its production cost.is higher. ModelⅣ(Longhai) is the lowest in Biological efficiency,but it is the highest in bag yield rate. Because cotton seed hull is not used in production raw material . so there is no transgenic risk. It meets the standard of green mushroom producing. ModelⅢandⅣgreatly reduce the amount of wheat bran and it could relieve the contradiction of'fungi and grazing'in mushroom planning4. When wheat bran replace by high-protein rice flour in planting Clitocybe maxima, there are no differences in the biological efficiency with the group that use wheat bran and better than the group that wheat bran replace by general straw.5. Aimed at the temperature in Fujian could not meet with the condition in producing Clitocybe maxima in winter, the air-stove was invented which is named for its unpollution, practicality, simple in structure, equality in heat, adjustable in saving energy. The fact shows that the temperature could be increased to nearly 27℃with air-stove and the abandoned bags of mushroom as the fuel. The high temperature makes the normal growth of Clitocybe maxima in winter and production and annual production comes true.6. The stem of Clitocybe maxima is disused usually, in order to explore the high nutrition and increased its additional value, the stem of Clitocybe was used as the raw material in the study, and finally the food techniques on the Gegu vermicelli was worked out. The results shows that the best ingredient of Gegu vermicelli is farina of Gegu accounts for 35%, powder of Gegu is 1%, powder of the stem of Clitocybe maxima is 7%, with amylumⅠ32% and amylumⅡ25%. The content of protein reach to 1.10% and Puerarin reaches to 0.019%.
