Clitocybe maxima belongs to Basidiomycota, Hymenomycetes, Agaricales, Tricholomataceae, Clitocybe. The Clitocybe maxima is rich in protein (especially the essential amino acids) content. It also contains a number of mineral elements, trace elements, vitamins, triterpenoids and polysaccharide which have immunity-enhancing function and antitumor effects.Although Clitocybe maxima is widely distributed in the natural environment, the knowledge of this mushroom is largely missing, with only the observation data related to the classification and wild habitat, and a few successful reports of breeding in experimental conditions. This paper aims to screen excellent strains of Clitocybe maxima and optimize the cultivation technology.The main results are as follows:1 Three excellent numbered 6, 2, and 3 were screened from the domestic cultivating Clitocybe maxima.2 The optimum combination of culture medium for the Clitocybe maxima mycelium cultivation and planting was determined. This provided the necessary conditions to establish the cultivation technique of Clitocybe maxima. By single factor tests of carbon and nitrogen sources and orthogonal test, the optimum mycelia culture conditions were obtained as follows: 2% fructose, 1% peptone, 0.1% KH2PO4 0.1%, and 0.05% MgSO4. The optimum components of the planting medium contain 78% sawdust, 20% bran coat, 1% gypsum, and 1% sugar.3 The liquid culture conditions for the Clitocybe maxima mycelium growth were optimized by single factor tests on basis of the mycelium biomass. The most appropriate liquid culture conditions are as follows: pH 8.0, 28 oC of incubation temperature, 150rpm/min of revolution speed, 150 ml/500 ml liquid volume, and 10% inoculum volume.4 By comparing the mycelium afterripening time and the temperature during the development of the fruiting bodies, the temperature most appropriate for the fruit body development is proved to be 26-29 oC, and the time of after-ripening is 10 days. In this condition, Clitocybe maxima appear rapidly and the biology efficiency is the highest.5 The raw materials, mycelia culture, and the management technology of fruit body development phase in Northern China were determined by investigating the living conditions (nutrition and environment) of Clitocybe maxima. The cultivation techniques of Clitocybe maxima in the north of China were also offered.
