The preliminary study was made on effect of photosynthesis organs treated and different nitrogen fertilizer regulation on quality of wheat grain, taken Nongmai2 for test material,deprived and shielded photosynthesis organs in anthesis in condition of different nitrogen fertilizer regulation,researched the effect of photosynthesis organs on exterior quality and nutritional quality for wheat grain in difference nitrogen application periods and different dosage. The results show that:1. Nutritional quality indexes content of wheat grain whoes plant was deprived and shielded photosynthesis organs is below normal growth(except zinc and fat).After deprived flag leaf, the cellulose,phosphorus, potassium, calcium, iron, vitamin B1, B2 content reduced by 30.09%, 23.96%, 36.69%, 18.28%, is 19.75%, 22.95%, 21.32% respectively, fat content increased 16.9%. The wheat ear have influences significantly to the content of calcium, iron, vitamin B1, B2 accumulation.After shaded ear, the calcium, iron, and vitamin B1, B2 content reduced by 28.03%, 17.67%, 29.37% and 17.63% respectively.When nitrogenous applied at different quantity, the wheat protein, vitamin E content reduced by 36.47% and 25.47% after deprived bur. The wheat cellulose, iron and vitamin E content reduced by 23.93%, 15.8% and 28.25% respectively after shielded sheath. Wheat photosynthesis organs is not isolated from each other after anthesis, they promote the volume weight of wheat grain, starch, protein, cellulose, phosphorus, potassium and others'content via photosynthesis compensation and coordination one another.2. Appling nitrogenous fertilizer at the jointing stage could improve exterior quality of wheat grain which ear and leaf is defect. The grain volume weight, starch, calcium, iron, vitamin E content of wheat grain which plant was deprived and shielded photosynthesis organs increased significantly. Appling nitrogenous fertilizer at the heading stage could increase significantly the cellulose, phosphorus, potassium and vitamin B1 content of wheat grain which photosynthesis organs is defect. Appling nitrogenous fertilizer at the anthesis could increase significantly the wheat protein, fat and vitamin B2 content of wheat grain which photosynthesis organs is defect.3. 255kg/hm~2 nitrogen dosage could better improve the grain exterior quality. Within 0kg/hm~2~255kg/hm~2 nitrogenous fertilizer application extent, the normal growth plant grain's starch, phosphorus and potassium content improve gradually, the plant nitrogen dosage is 255kg/hm~2 which grain starch, phosphorus and potassium content rised by 13.03%, 40.97%, 300% than the plant nitrogen dosage is 255kg/hm~2.The plant whoes nitrogen dosage is 150kg/hm~2, 255kg/hm~2, 300kg/hm~2 grain volume weight, protein, fat, calcium content increased significantly than the plant nitrogen dosage is 0kg/hm~2, 75kg/hm~2, The grain fat content of the normal growth wheat raised by 108.9% under the plant nitrogen dosage is 255kg/hm~2 than the plant nitrogen dosage is 0kg/hm~2,and raised by 32.76% under the plant nitrogen dosage is 300kg/hm~2 than is 0kg/hm~2. 255kg/hm~2 is the best nitrogen dosage for Improving wheat cellulose, vitamin B1, vitamin B2 content.
