Study on oxidation activity in the baking process of dynamic change and lipid peroxidation factors of the flue-cured tobacco under the same baking process, analysis physical and chemical properties of tobacco leaves with curing before and after,and sense and smoking on tobacco leaves with curing after, reveal the different varieties in the process of curing tobacco oxidase activity and modulation characteristics before and after the physical and chemical changes of tobacco leaf and differences.Provide a theoretical basis for the differents variety of tobacco leaves. In this study, Yunnan, Fujian, two producing of the differents variety of tobacco leaves for the test material. Systems Analysis and study on effect of baking temperature and humidity change on oxidation activity and quality of the flue-cured tobacco. The main findings are as follows:(1) Tobacco leaf polyphenol oxidase (PPO) activity in the baking process has emerged first increased and then showed a downward trend, PPO in "HD" and "CB-1" and "F1-35" of tobacco leaf is high activity in the baking process, Chlorogenic acid and rutin and PPO found in cells in different regions. The enzyme activity increased with Cu2+ content was enhanced.(2) Baking process of dehydration rate to affect tobacco membrane lipid peroxidation and membrane lysis of the main factors. Dehydration rate too fast will lead to a sharp increase in MDA content, which occurred leaf membrane lipid peroxidation. "HD" and "CB-1" tobacco leaf are extremely sensitive to the dehydration rate, The rapid dehydration that occurred slightly faster rate of lipid peroxidation, and the lower its peroxidase activity, the enzyme peak hours earlier can not effectively eliminate free radicals, reactive oxygen species. This is one of the major "HD" and "CB-1" curing is more difficult. (3) Six flue-cured tobacco varieties, after baking "HD" and "CB-1" tobacco leaf were higher polyphenol content, Before baking "Yunyan85" and "Yunyan87" total soluble sugar accumulation in tobacco low polarity, "K326" and "CB-1" tobacco leaf of mass per unit leaf area and leaf weight alone can explain the leaf cell arrangement is moderate, good porosity. "HD" tobacco leaf of total soluble sugars and free amino acids lower than other tobacco varieties, Modulation before and after the sugar/nicotine ratio was larger than "Yunyan 85" and "K326" small.
