The duck embryo is the vitalital egg that is fertilized in special technics.The chicken embryo egg has plenty of protein and some similar elements of human embryo. It has many kinds of function,such as make digest and absorption easy, anti-oxidation,anti-senescence.Besides, There are plenty of new nutriment produced when the duck embryo was growing,such as peptide.The peptide of little molecular weight can make absorption easier than protein,so we can make use of the duck embryo to empolder health-care food, and it would has a broad market.The duck embryo was taken as the raw material, Duck embryo peptide were separated by ultra-filtration technology. How those major ultra-filtration-system parameters affecting the membrane flux were studied. The peptide was purified by Sephadex-G25; The solubility, foam property and foam stability,emulsify property and emulsify stability and the functional of anti- oxidation,anti-fatigue and anti-anoxia of the different parts of duck peptides were also studied respectively.The following were the main results of these experiments:1.The ultrafiltration technics of the cherry vale duck peptide was studied, the ultrafiltration membrane with 50000 MWCO should run 30min for a cycle at 0.08~0.1MPa,35℃and natural pH; the ultrafiltration membrane with 13000 MWCO should run 30min for a cycle at 0.08~0.1MPa,<45℃and natural pH; the ultrafiltration membrane with 10000 MWCO should run 40min for a cycle at 0.08~0.1MPa, <45℃and natural pH; the ultrafiltration membrane with 60000 MWCO should run 60min for a cycle at 0.08~0.1MPa,<45℃and natural pH; the ultrafiltration membrane with 30000 MWCO should run 60min for a cycle at 0.08~0.1MPa, <45℃a nd natural pH.2. The ultrafiltration technics of the hemp duck peptide was studied, the ultrafiltration membrane with 50000 MWCO should run 20min for a cycle at 0.08~0.1MPa,35℃and natural pH; the ultrafiltration membrane with 13000 MWCO should run 40min for a cycle at 0.08~0.1MPa,<45℃and natural pH; the ultrafiltration membrane with 10000 MWCO should run 40min for a cycle at 0.08~0.1MPa, <45℃and natural pH; the ultrafiltration membrane with 60000 MWCO should run 60min for a cycle at 0.08~0.1MPa,<45℃and natural pH; the ultrafiltration membrane with 30000 MWCO should run 60min for a cycle at 0.08~0.1MPa, <45℃a nd natural pH.3. The different parts of duck embryo peptides were purified by Sephadex-G25 and the Phusico-chemical properties were sdudied, The results showed that the two variety of duck embryo peptides both have the well solubility, foam property and foam stability,emulsify property and emulsify stability. the two variety of duck embryo peptides both can improve the ability of anti- oxidation ,anti-fatigue and anti-anoxia of mice.
