Duck embryo is a kind of high nutritional value and nutrition effect food.The duck embryo does not only has the rich nutrients,and the duck embryo also has the certain function effect.It plays a vital role on nutrition health care.It has a bright future to take the duck embryo as the main raw material health foods. In this study, duck embryo protein hydrolysis by protease into polypeptide and free amino acids, then evaluate the function in anti-fatigue and anti-Aging of hydrolyzate.First, studying on optimization of process parameters about the hydrolysis of duck embryo protein. It conducts the research to the best hydrolysis craft by degree of hydrolysis . Enzyme complex to draw the best process parameters of Yingtaogu duck are: pH value 7.0,reaction temperature 51.0℃,enzymatic quantity 4101.2U/g, the rate of Pa and Tr 1while the maximal content of DH in average was 39.083%,peptide content was 77.084mg/ml. Enzyme complex to draw the best process parameters of Ma duck are: pH value 7.0,reaction temperature 51.1℃,enzymatic quantity 4125.6U/g, the rate of Pa and Tr 1while the maximal content of DH in average was 41.583%,peptide content was 79.054mg/ml.The two varieties of enzyme solution through the ultrafiltration of macromolecular protease interception to least squares, no hydrolysis of insoluble substrate peptide and insoluble peptide, at this point the main component of enzyme solution for small molecules and free amino acid peptide.Evaluation of the two varieties of functional enzyme solution. Through the blank group, Cherry Valley Duck embryo enzymolysis liquid low, medium and high-dose group, Ma Duck embryo enzymolysis liquid low, medium and high dose group compared to animal experiments. Anti-fatigue test results showed that the two varieties of duck embryo enzyme solution were able to extend the swimming time in mice, enhance the vitality and LDH after exercise of the reserve HG; lower blood LD and BUN levels and improve exercise endurance in mice. It is shows that the Cherry Valley Duck embryo, Ma Duck embryo enzymolysis solution could enhance anti-fatigue ability of the body, including Cherry Valley Duck embryo enzyme solution than anti-fatigue ability strong ferruginea. Anti-aging results showed that the two varieties of duck embryo enzyme solution can enhance the SOD activity in mouse serum to reduce the MDA content and enhance the body's ability to aerobic metabolism, reduce free radicals in the body. It is showed that Ma Duck and Cherry Valley Duck embryo embryo have anti-aging enzyme the capacity of liquid, which Cherry Valley Duck embryo enzyme solution features a strong anti-aging.
