As the first necessity of man, food is closely linked with people's daily life; and usually the formation of the catering feature in an area results from the long term developments of the local politics, economy and culture.As a world-wide famous historical and cultural city of China, Nanjing has been the capitals of ten dynasties; meanwhile, the developments of its politics, economy and culture also have its own characteristics. Especially in the period of Republic of China, after Sun Yat-sen overthrew the Qing Dynasty and established the Republic of China, Nanjing has gone through several changes of regimes such as Nanjing Provisional Government, Northern warlords Government, the National Government at Nanking and WANG's False Regime. So during this period the complexity and variability of social politics, economic environment and status in Nanjing went without saying. The perspective of this article locates at Nanjing during the period of Republic of China. It mainly studies the development and features of the catering industry in Nanjing during the periods of 1912-1926, 1927-1937 and 1937-1949; and emphasizes on the analysis of influences to the catering industry of Nanjing caused by the changing of politics, economy and culture environment during the Republic of China era; then announces the intrinsic affiliations between the catering industry of Nanjing and the developments of politics, economy and culture. Finally it is concluded that catering industry is the mirror of local politics, economy and culture. Provided political stability, economic progress and culture prosperity, the catering industry itself can naturally achieve healthy, stable and rapid development.
