As the basic department in hotel, the profit of F&B department is very important for hotel. With increasing development of catering trade in China, competition among hotels and restaurants will intensify constantly. How to choose the way of F&B operation is a big strategic issue that has the determining effect for the hotel industry in China .This article focuses on the factors in choosing the way of F&B operation in hotel. Based on a comprehensive review of literature on F&B operation, the article identifies six major features and the strength and weakness of F&B operation in hotel. The author builds a theoretical foundation for the ways of F&B operation that includes self-operation and outsourcing nowadays. With results from interviews, case analyses and questionnaires, the article studies the factors in choosing self-operation, the factors in choosing outsourcing, and the relationship between the factors and the positions of managers and so on. Upon the preceding research, the author concludes that hotel star, the human resource in F&B department, hotel forms, hotel strategic direction, hotel location and hotel character are six determining factors in choosing the way of F&B operation in hotel and that it is critical to encourage hotel to choose the best way in F&B operation.
