This paper mainly takes Islamic ethnic groups——Muslim Fan Ke (foreign visitors)and Hui people in the south of Fujian province as research objects. By using the method of a combination of Anthropological fieldwork and historical literature research, the paper explores and analyzes the culture of Hui nationality in the south of Fujian province. The study aims at exploring that: under the influence of multi-level social factors, how the ethnic groups of Hui and their culture developed and changed.In the article, from the perspective of social history, I regard the early Muslims Fan Ke ethnic groups as a society. From the developing and changing process of Islamic religious carriers during various periods, I analyze the rise and fall of Islam in the South of Fujian. Meanwhile, by using the theory of the diversity and unity of the Chinese nation, the paper analyzes the formation and development of Hui in the south of Fujian, and further explores the interaction and cultural fusion between the Muslim and other ethnic groups and finally gets the result that the former is formed during the latter's process. The paper also pays attention to use anthropological theories, such as ethnic identity and acculturation, in the study of Hui in the south of Fujian, attempting to make an analysis and interpretation on the change of the ethnic identity and society from the historical anthropology perspective. Through these analyses, we can say that, to a large degree, the purpose of the changes of the cultural identity of Hui is to adapt to, compete for and allocate for new resources and environment. During the process of Chinglish in Ming and Qing Dynasties and the Rejuvenation of the Nation after the founding of People's Republic of China, the different cultural characteristics Hui nationality stressed are symbolic capital that they used to express their ethnic identity.
