China is power in the consumption of honey. Honey is popular consumed for its high nutritive value and its contribution to human health. However, the adulteration and poor quality of honey have been emerged in the market. People has higher requirement of honey quality. The composition and the quality of honey varies mainly according to the botanical and geographical origin, and is also influenced by the process, environment and storage.The analysis of honey’ composition and drug residue can be a indicator to evaluate honey’quality. Many composition in honey have important influence on the colour, flavor, taste and nutrition.Howere, drug residue can not only reduce its original nutritional value but only can endanger human health.Capillary electrophoresis (CE) have showed more and more advantages to supersede older methodologied in the analysis of small molecules, including its unique assets of high efficiency, versatility for the analysis of a wide range of compounds and mat-ices,low consumption of solvent and analyte, less pollution toward environment and so on. In order to strengthen the assessment of honey, this thesis has established CE methods for deternimtion of organic acids, sulfonamides and Polyphenols, applied to honey samples. Specific results are as follows:1. The determination of eight low molecular organic acids was developed by field-amplified sample stacking coupled with indirect UV detection.in the fused-silica capillary column,10mmol/L3,5-Dinitrobenzoic acid as the background absorbance provider,20%methanol and0.3mmol/L CTAB as the complexing additive agents, all organic acids were separated in8.5minutes. The proposed method was successfully applied for the rapid CZE determination of trace organic acids in honey. Their recoveries from one kind of honey were82%-99%with the RSD less than8%, the results were satisfactory.2. The separation of five sulfonamides has been accomplished by indirect UV detection mode Due to the low concentration of SAs in samples, solid phase extraction (SPE) was used. The electrophoretic conditions were optimized with the running buffer of10mmol/L dipotassium phosphate in pH9.0, Samples is extracted by solid phase extraction column, after fitered and degassed, directly analyzed by capillary electrophoresis.five sulfonamides were separated in7.5minutes. The method has been successfully applied to quantitative determination of sulfonamides in honey and the recoveries were50%~99%.3. A simple capillary electrophoretic method for separating six polyphenolic compounds (Cianidanol, Chlorogenic acid, caffeic acid, Syringate, Ferulic Acid and Vanillic acid) was devised. Under the optimum conditions including separation voltage of-23kV in25mmol/L borate buffer (pH9.0), the analytes could be well separated within5minutes. Good linear relationship was established, the method was applied for the assay of polyphenols in honey, and their recoveries were81%~102%.
