Fruit vinegar is fruit or fruit processing scraps as main raw materials, are made in acidity drinks by fermentation. Fruit vinegar more rich in ten nutrients, is one of the new drinks collection nutrition, dietotherapy and healthcare. After ten years development, fruit vinegar industry still developed slowly. This article through to fruit vinegar market full investigation and in-depth Henan fruit vinegar enterprises production practice, research and analysis the reasons of impeding fruit vinegar development and put forward some improvement suggestions.Three main studies were carried out in this paper to get fruit vinegar production:1. Fruit vinegar development present situationFrom fruit vinegar definition, efficacy and its origin, we know that fruit vinegar in China has nearly a thousand years of history, but as the modern production only ten years. In China, there are more than one hundred fruit vinegar drinks production enterprises, distributed in more than 20 provinces, municipalities, autonomous regions, but mainly in Henan and Guangdong provinces. Most of fruit vinegar enterprises are small and medium enterprises, but sales volume and profits concentrated in a few large fruit vinegar production enterprises. The national ranking top three fruit vinegar enterprise respectively is: Guangdong World No.1, Shenyang Mckinley and Zhumadian Original. In recent years, the annual output and annual sales of fruit vinegar increases continuously, and the annual profits has been falling.2. Fruit vinegar enterprise production researchThrough the fruit vinegar enterprises from processing technology, packaging technology, enterprise staff, management system, production environment, fruit vinegar product, product sales, enterprise concept, this eight aspects of detailed survey found: Fruit vinegar processing process is simple, not only omit production links, the run time is compressed as well; Fruit vinegar packing don't conform to the state standards completely; Fruit vinegar enterprises lack of technical personnel; Fruit vinegar enterprise management system is not strictly; the product categories of Fruit vinegar is single; sales channel is narrow and the enterprise ideas obsolete.3. Our fruit vinegar production enterprise development and the problems facing the suggestionsBesides fruit vinegar enterprise's own problems, consumers don't have clear understanding in fruit vinegar; Fruit vinegar industry don't has national standards; The industy of fruit vinegar competition chaos etc. At the premise of fruit vinegar enterprises constantly consummate themselves, national released as soon as possible fruit vinegar drinks national standards, stabilize chaotic fruit vinegar drinks market, weed out processing plants which blend fruit vinegar by cheap additives, actively publicize by media in the meantime, guide mass consumption, invite famous beverage enterprise jointly participate in fruit vinegar drinks of development and production, executive together by the credibility of the famous enterprises, let consumers re-establish confidence to fruit vinegar drinks.Through three aspects above the study of fruit vinegar I consider that fruit vinegar will towards to drinks and health products two aspects development in the future.
