Today, more and more consumers would rather green products than others; most of them think that the green products are healthier to human body. The food and beverage enterprise is the closest industry for healthy, so the ability of the food and beverage enterprise to provide green product and the environment-friendly produce is very important. The examination system is a management idea and come into being on this playground.The idea of this system is mainly based on the examination data of science, and the purpose is to ensure the food and beverage enterprise product quality and to reduce harmful to the environment. This paper demonstrate the green restaurant management idea and related standards of home and abroad at first and uses case study method of KFC which has successful experience in controlling its'product quantity. Then this paper take ISO22000 and green restaurant theory as the principle to set up the model of the food and beverage enterprise examination system which establish the critical point during the production and consumption process. The model includes four steps: the raw material purchase, cooking, serving and cleaning. The enterprise also should add laboratory at the same time for the purpose of acquiring the science data, the laboratory can test the sampling and give the nourishment and sanitation data of the above steps. Based on the principle of environment-friendly, nourishment and sanitation, this paper analysis the above four steps again to ensuring each examination item .At last this paper put forward the measure of food and beverage which would establish the examination system considering the production of the food and beverage. Enterprise could control from three aspects of food security, nourishment and sanitation, environment friendly, these aspects are exist through the product producing and the consumption ,It need each section to keep its responsibility respectively. It is also need the enterprise to coordination at the same time, establishing leadership group with responsible for supervising. The government should take charge in supervising the food and beverage industry; the union of restaurant should do as a sponsor to the green food and beverage enterprise, green consumption and provide the technique, experience etc. Then this system will put in practice more efficiently.
