Since the reform and opening up,along with economic development and social progress,China's catering industry experienced historic decades,whether in industry scale,service quality,management level and economic contribution are greatly improved.In the process of development,as one of the traditional food and beverage industry of the third industry,it has always maintained a strong development trend.According to statistics,China have nearly more than 400 million hotels,restaurants and annual turnover is about 2 trillion yuan,in recent years it has been maintained up to 15%-17% compound growth rate.In 2008 Chinese meal Catering industry retail sales reached 1.5404 trillion yuan,it has an increase of 24.7% over 2007,maintained two digit growth rate for 18 consecutive years.In this year Chinese food first entry into the Olympic diet,but also to further its internationalization.According to the relevant statistical data,as of 2010,China's retail sales of food and beverage industry has reached 1 trillion and 760 billion yuan.But in recent years,with the drainage oil,additives,transgenic technology and other food safety issues,the attention of society generally improved,urban white-collar occupation in yoga,fitness,beauty and health care consumption,at the same time they begin to pay attention to their own "lunch",but also pay more attention to food safety and health to achieve food to raise character,food to health."Consumers in nutrition and health,health care and safety and other aspects of the requirements and make some homemade,vegetarian restaurant,health food,vegetarian restaurant emerges rapidly,which is the common carrier of green food.Generally speaking,China's catering industry in the management,operation development and other aspects has the following characteristics:(1)The stability of food consumption market bring a vast development space for catering enterprises.With the rise of disposable income and the change of consumption concept,fooddemand growth rapidly year after year,even during the economic crisis,it also have little effect.(2)the scale of catering enterprises continue to expand,and the pace of diversification accelerate.(3)China's catering enterprises attach importance to brand building,health,science diet concept will be the future development trend of food.In addition,as people pay more attention to health care,green food will become a fashion,if the enterprise can accurately grasp the changes of customer demand,higher than ordinary enterprises in the management level and service quality,so it is easy to form a good reputation,to attract new customers,retain old customers.Aiming at the Jiu She green catering company start up project construction and operation of the actual stage for the company,to explore the actual development of management mode,and to guide the company's actual management.Through analyzing the catering market,to understand the current situation and development trend of development of the catering industry,in-depth analysis of customer needs,and has important theoretical significance and the practical significance to the future development of the company.Through the detailed introduction the project process of Jiu She green catering companies,to identify operation and quality management problems of the catering company start-up phase,do detail work well.This research is a combination of theory and practice,has a strong practical application value,hoping to provide useful inspiration and reference for the development and management of similar enterprises.In view of this,we have conducted in-depth research on the Jiu She green food and beverage companies in the start-up stage,to provide management for similar enterprises to adapt to the development of the times.
