With its rapid development in the world, tourism has become a prosperous field, deeply concerned by the world. China is rich in tourism, and it has a broad market for tourism. However, at present, a series of problems exist in tourism development, such as the education for tourism less contact with reality going without characteristics, disordered distribution, being an incomplete educational system, low teaching quality and low prodution, and problems like the vicious competition of enrolling students caused by the adjustment of the whole educational system. These problems have been hindering the growth of tourism itself and they also do not adapt to economical globalisation nor the longing for tourism talents for our knowledge epoch. Therefore, opportunities and challenges coexist in China's tourism education.Based on the tourism courses and their development in vocational colleges in several regions in Hunan Province, surveys indicate that there is a deep gap between the present courses and their training goals. A much more scientific system is urgently needed. The combination of production and study, which can expand the content of education, promote the renovation of courses, enhance better direction of setting courses.It is the trend in vocational education. On the basis of the current new environment, negotiating the development of tourism courses in vocational colleges is thereby really meaningful.The related items include four aspects: the development of training goals of the courses, content and its structure of the courses, implementation of the courses and assessment of the courses. Goals of courses must be specialised, embody comprehensiveness in content, emphasize the training of creative spirit and ability and aim to train learners' ability of combining theory with practice. The content includes development of general public courses and vocational courses. Key factors relevant to the courses include teachers, students, textbooks and bases for practice. Assessment of courses includes four steps: the topic to choose, preparation for the reaearch, implementation of the research, the treatment and application of assessment. The cooperation between the field of production and colleges offers a significant opportunity for the development of vocatioal courses. Support from the government, material supply from the state and enterprises, teacher training and social encouragement are all strong elements that guarantee the smooth advancement of the development of vocational courses.
