Objects:In order to analyze food safety problems in the production procedure of food enterprises and the influence of food job holders on food safety, the investigations on basic information production scale food safety control system and food production job holders in Shanxi food production enterprises have been conducted. Regarding the issue of food safety in food production procedure, scientific management experiences of food production enterprises in developed countries are refered. To and improvement direction is proposed, and therefore providing theory basis for strengthening food safety advice on food processing improving the management system of food production enterprises and raising food safety level.Methods: Collecting data on basic information of food enterprises and current status of food safety control and basic working conditions by issuing questionnaire, problems existing in key links of food safety in production procedure have been found by descriptive analysis and statistical analysis, successful management experiences on food safety in developed countries are refered to, disparity has been identified, improvement methods have been proposed.1 .Obtaining basic data on food safety control factors of food enterprises in Shanxi province through statistics.2.Describing the situations of job holders, sales scale,production management authentications,the educational background of persons in charge of production and quality control.3.Describing execution situation of food quality test and food standard in food production enterprises.4.Analyzing existed problems in food production enterprises by understanding food quality and safety control situation.5. Constructively proposing quality control measures for food production enterprise .Results: The majority of food production and processing enterprises in Shanxi province were operating in a relatively small scale;The food safety management system and its level in food production and processing enterprises were backward,the whole educational quality of persons in charge of production and quality was somewhat low; The jobholders's learning manner and behavior towards the food safety knowledge were expected to strengthen;The control system of various links in the food production procedure were not well,and even some enterprises were out of control;. Food examination ability was low and the specialized quality of personnels engaged in the examination was somewhat low;The quality specifications that food production enterprises follow were incomplete. Conclusions:Perfecting food quality standards system as soon as possible for food production enterprises;Clarifiying the responsibilities for food quality safty to food enterprises runners, raising the aility of quality examination and test and its level;Enhancing the procedure control for food production, delivering ISO9000 system,ISO14000 system,GMP,HACCP system managements in the food production enterprises by law stipulation. At the same time speeding up the standardized production advancement of traditional enterprises in our province,formulating the localized standards for traditional food as soon as possible,raising the entry conditions for food production enterprises,promoting the quick enhancement of traditional food production enterprises.
