Safety of food quality is the basis of ensuring human health and improving the quality of human life. It also ensures the harmonious and stable development of society. Recently, with the rapid development of economic, our food industry has got a rapid development. But the incidents of food quality occur frequently, the situation of food quality is still not optimistic. The incidents of food quality that often was exposed greatly provoke the public’s nerves and challenge the government’s credibility. Thus it is very important to research the control of food quality in order to reduce accidents.This paper, in view of research on the theory of asymmetric information, externalities and game, in the analysis of the current problems that production process occurs in region of H, studies the control of food quality and safety in production process.First, the paper, on the basis of reviewing the mechanism of food quality’ incidents, combining the current supervision of H to production process, analyzes problems that production process has in region of H through data analysis. Then the paper analyzes the reasons that come from enterprise and government. For enterprise, the paper mainly analyzes the possible reasons of food quality and safety in production process with fishbone diagram from "man, machine, material, method and environment". For government, the paper mainly analyzes the possible reasons of food quality and safety in production process from system, technology and person.Second, on the basis of previous analysis, the paper gives suggestions on strengthening the control of food quality to enterprise, government and community stakeholders from the view of solving information asymmetry of food industry. The enterprise should strengthen the sense of quality, improve relevant systems, use advanced technology and quality management methods to enhance quality assurance capabilities. The government should improve the system, technology and person in order to supervise the safety of food quality effectively. The community stakeholders should play a full part on public opinion and supervision in order to form an effective supplement to the supervision of government.
