| There are a lot of food safety affairs about pork during these years. Pork quality and safety influence domestic consumers' health and the international competency. Pork quality and safety problem becomes quite important and urgent. It is vital to establish effective pork total quality control system. The thesis establishes non-pollution pork safety technology system covering feedstuff, feed, slaughtering, dispatch, storage and sales to ensure non-pollution production process of the pork in terms of related national legislation and standards, the formation of food chain, the principles of HACCP, stockbreeding industrialization and practical operation experience in the companies. Main research aspects are listed as below:1 It analyses problems of domestic and foreign products safety status, strategies and domestic pork industrialization and proposes the solution.2 It analyses the main factors that influence feedstuff safety and applies ISO quality management system and HACCP system in feedstuff production, develops non-pollution feedstuff according to non-pollution legislation and standards to reduce antibiotic remains to make the origin feedstuff non-pollution.3 It makes use of "company-base-farm" model to establish non-pollution "six identified system", dealing with the relation among leading companies, feed bases and farms. It brings in key control points mechanism of feed environment, cultivating management, feed introduction, epidemic prevention, drug usage, dealing with broken needles, castrated pigs to improve the safety of pigs according to non-pollution legislation and standards.4 It brings in foreign advanced craftworks and equipment to improve backward craftworks and equipment, it brings in HACCP system to slaughtering and processing process to control pigs' quality and achieve non-pollution slaughtering.5 It brings in company image identified system, vision identified system to establish brand strategy and expand business scope according to GB/T19221standards and GB/T19575requirements. Therefore "five identified" sales models could be built to avoid cross pollution to achieve non-pollution sales.6 It carries out total inspection and monitor policies of pork production total process to establish a consummate inspection system to ensure pork that consumers buy from the stores is non-pollution. It proposes to establish non-pollution pork tracing system and information flow system to solve problems.Above all, according to non-pollution food legislation and standards and HACCP system, the thesis establishes a non-pollution pork safety production system covering non-pollution feed production technology, non-pollution slaughtering and processing technology, dispatch safety technology, inspection technology, tracing technology and brand strategy to guide domestic pork quality safety management in practice. |
