| As the largest pork producer and consumer country in the world, pork safety is related directly to the safety of human being's health and wealth. It is very important for us to adopt a series of steps to make sure of the safety during the procedures from pork production through processing, distribution and transporting. The following three cases were included in this paper: (1) Based on inter- and intra- national pork marketing developing status, overseas pork safety management strategies and common characteristics were introduced, pork safety status of China was analyzed in this paper. (2) HACCP principles, including its conception, background of its generation and development, international laws, some countries' statute, and China's correlative rules, were introduced in this paper. The progress of the application of HACCP in the fields of pig production, procedures of slaughtering and processing was reviewed. The development of HACCP controlling software was also included in the paper.(3) Optimized quality management model was put forward, based on the above analysis. The model including the strengthening of lawmaking on the fields of the pork safety, the perfecting of quality standard of pork and its product, setting of tracing mechanisms pork and its product quality, enhancing of technical level of production and inspection, practicing of the monitoring system throughout the procedures from the pig production to the pork consumption, and the increasing of the systematization extent throughout the production, circulation and processing. |
