With the rapid and stable economic development and the raise of comprehensive national strength of China, the national life of China is highly improved. The people are capable of enjoying and more concerning their life quality and pursuing for safe and healthy life. The catering, as one of the basic consumptions of people, must also meet the relevant demand of quality. Besides"green"healthy catering, the people have higher requirement and pursuance for dining environment. The ecologic catering industry of Beijing city is now rapidly developing and in the stage of exploring, so the study on the degree of content of the people on dining environment is very important for the operational success of ecologic restaurants. At present, the study of China on ecologic restaurants stresses only on qualitative analysis and description, being in lack of specific quantitative research. Under this background, this Dissertation, with the methods of questionnaire, observation, on-the-spot reconnaissance etc., takes the consumers'content theory, appraisal technique and statistic analysis method into ecologic restaurants for application study, for supplying methods and strategies for the operational success of ecologic restaurants. This Dissertation, firstly, through questionnaire, gets to know the opinions of consumers on the importance of each index; secondly, according to this index system, appraises consumers'content on Beijing's ecologic restaurants, and the statistic analysis results indicate that: it's urgent to improve the environmental cleanness, acceptable price, good services, toilet cleanness, perfect rest facilities, diversification of activities, diversification of pleasure facilities, tablets of fruits, unique views of restaurants etc.; thirdly, summarizes the research, and according to the conclusions, puts forward the methods and strategies for improving consumers'content on ecologic restaurants. This Dissertation finally points out the innovation and deficiency of the study, and makes a prospect on the appraisal study on consumers'content on ecologic restaurant.
