When facing varied news of foodstuff, most consumers consider that the safety problems of foodstuff are increasingly serious and they are even afraid of the safety of those food ate by themselves. The definition of unsafe foodstuff, made by WHO is one that holds toxic and harmful substances within itself, which are undoubtedly dangerous for our human beings'health. Now there are there problems catching our eyes most, the first one is foodstuff polluted by some microorganisms, which will cause some food origin disease, just as dysentery, typhoid, cholera and etc. The second one is chemical pollution including pesticide, veterinary drug, and heavy metal and so on. Then the last problem is about excessive use of food additives. The data brought out by USA government shows that there are about 70,000,000 people caught by experimental disease per year. In 1980th century, there are nearly 300,000 people fall ill because of hepatitis caused by eating raw Magi(毛甘) in Shanghai.The safety of foodstuff is a systematic engineering, which not only relates to the health of man but is connected with the profit of food safety's managers. This essay mainly does a research on the game between producers and consumers of safety foodstuff. In order to chase more profits, the producers, as rational economists, in a certain mature situation, may manipulate unfairly impelled by some lucky psychology at the cost of all consumers'profits.The whole essay is divided into five parts, the first chapter is preclude, which mainly discusses the research background, profound meaning, method as well as the thinking thread of this topic. In the second chapter, I do a research on literatures from home and abroad, and then make a simple generalization of them. Besides, I quote the base of theory, lemon marking and game theory that is divided into signal transmutations game and Bayesian equilibrium. The third chapter not only describes the contemporary phenomenon of food safety from home and abroad, but states the managerial system of it and shows the existing distance compared with the developed worlds. The forth one is chiefly about the pervasive managerial system of safety foodstuff----HACCP system and describes the formation, managerial principle of this very system. Then the fifth one does a simulation of participates in food market with the help of game market, it proposes three probable balanced state, analyzes the model and then give out the analysis results. Referring to the part of generalization, it points out acceptable suggestion and measures basing on the former analysis.
