The traditional management model in hot-pot catering industry brings a lot of defects and limits under current market demand.The low entry requirements of this industry and the possibility of service staff making unintentional mistake restrain a firm from developing and engaging efficient marketing activities. Consequently, the traditional business model for Hot-pot industry is not sufficient enough to compete in the current market structure in the long run by generating enough profit for continuous growth. In the meanwhile, with the help from advancements in telecommunication technology and rapid innovation of sophisticated software, information technology has penetrated into all kinds of industries and brought new development trends to the traditional industries.The business model of Hot-pot industry is now experiencing a new trend:integrating with information technology, forming a new business model featuring informational management. Operating in this new model, Hot-pot catering firms can increase the quality and efficiency of management. It also provides the path to standardized production and service innovation, as well as broad-channel informational marketing. Finally, it can increase firms'core competence to maintain vigorous development and profit. Based on the background above, this dissertation starts with the shortcomings of traditional business model for Hot-pot industry. Then with the aim of increasing firms'competence, it addresses the innovation of Hot-pot business model in terms of theoretical analysis and case study, followed by the data analysis of questionnaires about consumers' perception and experience towards informational management model in Hot-pot restaurants. In the end, it presents with the innovation elements and feasibility analysis on innovation of Hot-pot's business model innovation by informational management; and concludes the topic with suggestions and final remarks.
