| As an important part of the third industry,the development of catering industry will form a chain economic effect,and promote the development of related industries such as planting and aquaculture,which will play an important role in expanding domestic demand,increasing employment and promoting economic growth.Since China’s catering trade revenue broke through three trillion in 2015,the catering market has changed greatly with the upgrades of people’s consumption,the public catering proportion increased significantly,and from the view of the whole world,large-scale and standardized enterprises are less,although the differences in dietary in different place have a certain impact on standardization,the fundamental reason is that the development of business model is lagging behind.Therefore,it is of great theoretical and practical significance to study the path and the evaluation of the catering business model.The author identifies the research methods and technical routes,by combing the relevant literature on business models and catering industry at home and abroad.The related concepts are defined,and the content of the business model is mainly studied in this article from the aspects of value proposition,partnership management,operation rules;then the three theoretical foundations of supporting this article are expounded,including system theory,value chain theory and innovation theory.In the third chapter,it analyzes the current situation and existing problems of catering industry in China,and tries to put forward three innovative paths for the business mode of chain catering enterprises,and the business model of the case enterprise A is analyzed,then the business model is evaluated by the AHP and the fuzzy comprehensive evaluation method.In the evaluation stage,3 first level evaluation indicators,9 two level indicators,31 three level indicators were established,and the selection of each index in the index system was explained in detail.Through research,the author proposes that the business mode innovation of catering enterprises should be based on value proposition,partner interface and operation rules,and try to put forward the innovation path of chain catering business model: value proposition innovation based on value system,partner interface innovation based on external value chain and innovation of operation rules based on internal value chain.Use quantitative and qualitative methods to analyze and evaluate the case enterprise A.The conclusion is that A enterprises have better business models and adapt to the market and have strong competitiveness.The evaluation model of chain restaurant business model isreasonable and feasible.By calculating the difference value,we can get the optimization and improvement sequence of A business mode and optimize the design with three innovative paths proposed in this paper.Meanwhile,it also has practical guiding significance for other catering enterprises. |
