Yellow rice wine is our traditional wine types, in recent years, with China’s economic developping and people’s living standards improving, the yellow rice wine industry has been very rapid development. However, unlike beer, liquor, wine industry compared to the yellow rice wine industry still exists a big gap. On the one hand, the lack of in-depth exchange of yellow rice wine industry technical, enterprises only stay in the visit level, lack of technology will promote such activities or on-site technical exchanges, so this can not be advanced innovative technology companies within the industry to deliver timely. Learn from each other, the development of yellow rice wine production technology is to allow companies more vitality, innovative way, which is also conducive to the development of China’s yellow rice wine industry. On the other hand, the lack of automated production yellow rice wine industry related technologies, Chinese rice wine industry is only part of the business use of mechanization or semi-mechanization of production, overall still a cottage, and has not yet formed an integrated production control system control and detection. Aiming at these problems, the design of the yellow rice wine fermentation process computer control system, combined with the fermentation process control key characteristics, design the corresponding algorithm, now the research and application of the results of this paper are summarized as follows:(1) On the basis of computer control system components and design principles, combined with the yellow rice wine during fermentation processes, the design of the computer system for yellow rice wine fermentation process, including:system architecture, network architecture, hardware architecture, communication, system configuration, and database.(2) On the basis of yellow rice wine off the tank temperature control characteristics are analyzed on the combination of neural network and PID control algorithm is proposed off the tank temperature PID control yellow rice wine BP neural network model.(3) Analysis of the characteristics of the former fermentation temperature control, and explains conventional control methods in yellow rice wine before fermentation temperature control system defects, after comparing the various algorithms selected predictive control algorithm, combined with neural networks is proposed a former yellow rice wine yeast predict neural network model based control.(4) Combination of the actual production of rice wine, divided into three levels (PCS/ MES/ERP) introduced the wine business is mainly composed of information technology and initial implementation.
