In recent years, the market of rice wine which is regarded as our traditional "national wine" has grown rapidly. As a result, the production scale of the rice wine enterprise is gradually enlarged. At the same time, the development of automation and information technology of the rice wine enterprise is still lags far behind. Most of the rice wine enterprises in china still use the manual and semi mechanized production models during the brewing process, and the production and management efficiency is rather low. In recent years,the integrated automation solutions, a combination of the advanced automation technology, information technology, computer science and the concept of scientific management, has been applied and developed to some extent in the wine and spirits industry, but there is no application case in the rice wine area yet. Based on a large rice wine enterprise’s automation engineering project in construction, this paper mainly focuses on the integrated automation solutions of rice wine industry, which includes the automated control process,integrated automation structure, control system and data communication, enterprise information integration,process control and optimization and other relevant issues. The main work and innovations of this paper are as follows:1) The detailed control process of the rice wine enterprise including the seven main section of brewing, post fermentation and squeezing three main workshops and utilities such as CIP, refrigeration is established based on the practical investigation and research of the production process of the rice wine. And then the foundation for the automatic production is been laid.2) The whole structure of the integrated automation system for the rice wine enterprise is builded. And the design of the process control system is completed based on the WebField-GCS5platform of Supcon,which includes the design of heterogeneous control network, data communication mode, hardware configuration and control interface etc.3) According to the characteristics of the rice wine enterprise,the main function modules of the MES and ERP are analyzed and designed. With the J2EE platform and SSH framework technology, the design and implementation approach of some modules of MES is given in this paper including database design, page design,UML class diagram design,function implementation etc.4) The information integration methods between the three layer structure of PCS/MES/ERP in rice wine enterprise are introduced in this paper. The OPC technology is used to realize the information fusion between PCS and MES, and the technologies such as RMI, WebService are used to realize the data communication between MES and ERP which are constructed based on J2EE.5) The control process of the front fermentation during the rice wine production is studied in this paper. Firstly,the quality prediction model is set up using the BP neural network.Secondly, the output of the quality prediction model is translated to the adjustment factor of the fuzzy controller of the front fermentation process. And then the adaptive fuzzy control of the front fermentation during the rice wine production is finally realized. The simulation result gives good control effect.
