Liquor brewing technology has a long history in China. However, the whole fermentation process cannot be accurately and quantitatively described because of the following reasons: the complex production process, the hard operation process, especially in the fermentation process, its internal mechanism is very complex which influence the production of it. So many domestic liquor companies still use artificial experience or semi-automatic control operation which has a low control precision, and a complex operation process, and increase the instability of the fermentation process. Finally it is difficult to meet the increasing needs of the social production which has restricted the development and expansion of liquor-making industry. This paper is going to optimize the fermentation production control system and control strategy, to improve the production efficiency of the fermentation process and the precision of control, which has important practical significance. on the basis of the designation of advanced fermentation control system, this paper further optimize he fermentation temperature control strategy, the main work is as follows:(1) according to the actual construction demand of the experimental base of Hubei University of Technology, design the liquor fermentation control system based on PROFIRBUS bus control. System adopts two levels up and down a machine monitoring, PC by computer and configuration software(human machine interface), under a pause with S7-300 PLC, write PLC logic control program, communication program and operation of man-machine interface operation, in order to achieve the optimization of the control unit movement, and the stability of data transmission.(2) analysis of the current advanced control strategy and control over the production characteristics of objects, as the goal, in order to improve the control precision of system key parameters, such as temperature, PH of precise control to provide a kind of based on fuzzy PID control strategy, namely by real-time measured input values, the fuzzy control reasoning process, real time need of the gain parameter of conventional PID control strategy to achieve real-time online to gain parameter setting, suitable for the controlled objects with nonlinear and hysteresis characteristics.(3) build the experimental model of fermentation tank temperature fuzzy PID control based on the fermentation tank temperature as experimental object.Through the theoretical analysis, it have the mathematical model of temperature control. Using MATLAB/SIMULINK tool to experiment simulation many times, compared and analyzed the results, the results show that the use of fuzzy PID control can reach the balance position faster.
