In order to further exploit and develop the camellia seed resource, the oil extraction optimizing conditions were studied by ultrasonic assistant method, aqueous method and aqueous method, using camellia seed as raw materials. The physical-chemical characteristic was also analyzed. The three different methods were compared through the oil extract rate, solvent use, the physical-chemical characteristic and main fatty acid composition of the oils. Main results follow:Response surface methodology was used to optimize aqueous extraction of oils from camellia seeds and then the oils quality parameters were analyzed. The results show that ultrasonic power 519.4W,extraction time 53.6min, the solid/liquid ratio is 1∶8, and the rate of oil extraction was 96.1%. The physical-chemical properties of the oil were good according to national standard.The process of aqueous enzymatic extraction of oil from Camellia seed oil was studied. The experimental results showed that the added amount of enzyme, extraction time and extraction temperature have significant impact the oil extraction rate. The order of factor is follow: added amount of enzyme> extraction time >extraction temperature. The optimum extraction conditions were obtained as follow: added amount of enzyme 4%, extraction time 90min, extraction temperature 45℃, the oil extraction rate reached 84.4%. The parameters of extraction oil were good according to the national standards.In order to investigate the feasibility and technical conditions of aqueous extraction process of camellia seed oil, response surface methodology was used to optimize aqueous extraction of oils from Camellia seeds and then the oils quality parameters were analyzed. The results show that the optimum extraction conditions were obtained as follow: extraction temperature 78.3℃, extraction time 4.3h,water-material ratio 3.8, roast temperature 150℃, the oil extraction rate reached 69.1%. The parameters of extraction oil were good according to the national standards. The research shows aqueous extraction process of Camellia seed oil is feasible.The three different methods were compared with extraction efficiency, the physical-chemical characteristic and main fatty acid; the results show that the different method have their advantages and disadvantages from oil extraction efficiency, the methods were chose depending on different circumstances. From the physical-chemical characteristic of oils, the refraction index, saponification value, specific gravity, viscosity and thermal reaction have no significant difference. The main fatty acid composition has no significant difference using different extraction methods.
