With the development of stock raising, the use of veterinary drugs has been greatly increased. With a wide antibacterial specrum, tetracycline antibiotics are used as feed additives for the treatment of bacterial diseases and promotion of growth. However, antibiotic residuals in animal derived food because of antibiotic abuse do harm to people's health, so it is focused in the worldwide. As we entered the world trade organization, antibiotic residuals have greatly affected the imports and exports trades and the benefit of our country. In order to monitor the residues of tetracyclines antibiotics in animal derived food and assure the food safety, it is necessary to develop sensitive, accurate and relible methods of antibiotic residuals. We developed ELISA and high-performance liquid chromatography and high-performance liquid chromatography-tandem mass spectrometry to determine the tetracyclines residues in egg based on the literatures all over the world and the residual analysis experience of our laboratory. In this study, The structure, physical and chemical properties was detailed introduction, as well as their residues in animal derived food doing harm to people's health. This paper reviewed research status of tetracvcline residuals in anminal derived food from scholars all over the world. An ELISA method for the determination of tetracycline, chlortetracycline and oxytetracycline residues in egg was established with the multi-residue tetracyclines test kit which was researched and produced in our laboratory. The limit of detection was 6.6pμg/L. The rates of recoveries ranged from 43.6% to 101.4% in egg with tetracyclines at 100μg/L. The RSD of intra-batch was within 25% and the inter-batch was within 30%. The cut-off value was about 39.5μg/L in egg.Solid phase extraction technique was used in test 2, pretreatment conditions were investigated and optimized from some factors such as extraction solvent, extraction cartridges, the types and volume of eluent. The tetracyclines were detected by high-performance liquid chromatography, method developed was studyed, and the result was satisfacrory. By HPLC-MS/MS detectioned, standard samples from 25ng/mL to 500ng/mL had a good linear relationship, the correlation coefficient R2>0.99.when the addition concentration was 50μg/g,100μg/g and 200μ/g,in oxytetracycline, the average recovery was 66.5%~112.5%,RSD was 2.4%~11.6%within group, and 2.7%~9.3%between group; In tetracycline, the average recovery was 60.7%~95.5%,RSD was 2.2%~8.6%within group, and 5.O%~9.2%between group; In chlortetracycline, the average recovery was 64.8%~115.9%,RSD was 2.0%~7.3%within group, and 5.8%~15.4%between group.
