Turpan lies in the western border of china.It is the hub of the ancient Silk Road,and the place where both Chinese and Western culture integrated.The special landscape,hydrology, climate and other conditions of this area provided a good condition for the development of agricultural production. A wide range of crops, fruits and vegetables were growed in Turpan area,and many species of livestock were reared by the local people,so they can ate much meat in their diet.People also drankand ate spices,so they had a rich diet. Eating utensils in the region included food processing equipment,cooking equipment,eating utensils,and other storage appliances.In the shape and decoration,these appliances had a great innovation.The region of Turpan had a diverse food culture,it integrated agricultural civilization, animal husbandry civilization,and the West aliencivilization as a whole,in which farming was the dominant culture.The formation of this food culture benefited from not only the improvement of agricultural production technology in Jin and Tang Dynasties period,but also from the unusual local cultural environment and historical background of the times.Turpan area of food items riched diet of the motherland and promoted the development of many related economic sectors during the Jin and Tang Dynasties,and it also played an important role in promoting reference for Central Asia,West Asia and other countries to understand Chinese food culture.
