Chinese Islamic food culture is the treasure of Chinese national culture, forming with the spread of Islam. In the development process through the ages, Chinese Islamic food culture forms the Islamic culture with Chinese characteristics, drawing the cultural quintessence of the Eastern culture and combining with Western culture. It has the distinct unity, integration, regional and changes of The Times.Chinese Islamic food culture has a long history, combining the spiritual civilization and material civilization with the Oriental culture constantly colliding, cooperation and integration. Forming the Koran and Hadith spirit as the core concept, special ideas,thoughts,customs,art,moral philosophy and value orientation guide diet production and living. The development and utilization of food materials, manufacture, storage, transport to consumption result in a series of results of new science, technology and material. The combining of material wealth and spiritual wealth form Chinese Islamic food culture of rich ethnic characteristics.In recent years, the rapid development of Chinese Muslim catering depends on a long Islamic food culture. But in the process of development, there are still many disharmonious factors, such as non-Muslims running Muslim catering, which greatly hurt national sentiment, are not conducive to the construction of a harmonious society. So this paper will show the details of current situation, reasons for non-Muslims running Muslim catering and give some reasonable and feasible suggestions. The first chapter discusses the historical origin of Islamic food, the origin and development of the Islamic food culture, the relationship between Islamic food and Islam, and its diet taboos. We will have a general understanding of particularity of Islamic food by the analysis of the above problems.The second chapter introduces Islamic food of survey site---- Shijiazhuang, including humanities and geography of Shijiazhuang, the distribution of the Hui nationality, the historical evolution of a mosque. The latter part of this chapter describes Islamic restaurant industry status of Shijiazhuang in detail. On the analysis of the four typical cases----two restaurants managed by non-Muslims and two restaurants managed by Muslims, we know the restaurants managed by non-Muslims are more suitable for the development of modern society needs.The third chapter discusses for the advantages of good dining environment, variety of dishes and advanced management, the restaurants managed by non-Muslims are more suitable for the consumption demand of modern society, but also hurt nationality feelings between Hui and Han, even unfriendly to Han. According to the questionnaire survey, the writer summarizes three dissatisfactions of Muslims for the situation of Islamic food, and gives us the reasons of non-Muslims managing restaurants.The fourth chapter analyzes the existent problems of Islamic food and reasons. The author thinks that the main reason to cause the problem is substandard Muslim food management and loopholes in laws and regulations which cause the whole Muslim food market good and evil people mixed up, all kinds of so-called "Muslim food" appear on the market. So the author thinks if you want the Muslim food market to develop well, we should standardize Muslim food management.For this phenomenon of non-Muslims engaged in Muslim restaurant, academia should take seriously: On the one hand, the halal food management in China need to be improved loophole; On the other hand, non-Muslims managing Muslim food really can destroy national emotion, go against national unity and bring the society unsteady trouble. So this paper aims to offer the relevant government departments a more objective decision, which has practical significance for both academia and the whole society.
