As a livelihood industry, catering has been expanding for these years, its role in national economy has improved significantly. Innovation of catering operational types is conducive to optimize the industrial structure, enhance the corporate performance and meet the consumers'demand better. In this context, this paper study on the operational types innovation of catering.Co-evolution theory is one of the research hotspots in domestic and foreign, it can provide a new research direction for catering, and lay the theoretical basis of this study. The paper use co-evolution theory to study on catering will expand the catering's research horizon, and provide advice for government decision-making.The paper has seven chapters. Chapters1, introduce the background and significance, explain the content and methods, and propose the innovations. Chapter2, systematically reviewed the general theory and existing research results of catering format innovation, discusses the main theoretical basis of this study. Chapters3, analyze the urgency of the catering format innovation, and build a power system. Chapter4, use co-evolution, co-create value and win-win cooperation as a main line to analyze the mechanisms of the operational types innovation of catering, and build a theoretical model. Chapter5, put forward some countermeasures and suggestions for operational types innovation of catering. Chapters6, take the "capital of casual gourmet" Hangzhou as an example to analyze its catering format innovation. Chapters6, give a general conclusion, point out the inadequacies and prospects.The main conclusions of this study:Catering format is formed in response to market demand, it is a combination of business forms and organizational form, and it is the specific manifestations of the modern catering industry. Enterprises' sustainable development, consumer demand and increased competition in catering market constitute a power system for catering format innovation. Co-evolution, co-create value and win-win cooperation is the main line of the catering format innovation. Play the enterprises'functions, change the consumers'role, and strengthen the government's service role are the countermeasures for catering format innovation. The achievement of Hangzhou is because of the cooperation of enterprises, government and consumers.
