China is a large producer and aquaculture of flatfish. Flatfish are very popular forits abundant nutrient content, high protein, low fat, vitamins and other characteristicsof collagen, so the markets share keeps increasing. However, due to the increasingpollution of marine environment and harmful chemical substances deliberately addedto breeding process, aquatic product security events have occurred frequently inrecent years. As a result consumers’confidence is damaged and they doubt the qualityand safety of aquatic products. So analys and evaluate the security of flatfish isimportant. The food safety risk assessment is objective and it is the basis forestablishing food safety standards and settling disputes of the international food trade,not only can be used to protect the health of consumers, but also can be used topromote fair trade in food.The main content of this paper studies can be divided into the following sixaspects:1. Analyze the statistics of aquatic product security events which published ataquatic products information weekly (2009to2011). Based on these statistical data,analyze the types, characteristics and causes of quality and safety of aquatic productquality and safety. Summarize the risk factors and their sources of aquatic productquality which prepared for further study of flatfish fish risk factors. The risk factorsinvolved in the aquatic products quality are divided into six parts, namely, fisherydrugs, microorganisms and parasites, food additives and illegal food additives, toxicand hazardous pollutants, pesticides and other.2. Specific analyse flatfish fish by from farm to fork. Explore hazard in waterquality, feed, fishery drugs, processing, transportation, storage and sale of a total ofseven segments. Compare the similarities and differences of hazards between wildand farmed fish. Initially identified the major risk factors that may threaten the edibleSafety of flatfish, which include malachite green, nitrofurans, chloramphenicol, olaquindox, fluoroquinolones, pb, cadmium, DDT and HCH, trifluralin.3. Sampling and testing on hazard in flatfish, by experimental analysis of theresidues of Pb in the flatfish. Analyze whether the hazard threaten the f Edible Safetyof flatfish. Will ultimately determine the hazards in flatfish are malachite green,nitrofurans, and Pb.4. By analyzing the residues of Pb from the flatfish and assessing the dietary exposure of Pb when consuming the flatfish in China. The result is that based on the residues of Pb in flatfish, the Pb exposure levels of flatfish per capita in thedietary of our residents is less than the Pb tolerance dose for each person every day theoretically. There is no safty risk in normal, however, for flatfish consumption urban areas have a little more risks than population in rural areas in China.5. This article depth analysis of seafood safety is a system of wide range ofissues, covering the management and supervision, breeding, feed production, terminaltesting, standards development and so on. There are some food safety risks in theflatfish, if peple take reasonable measures they can control the risks within a saferange and provide safe and healthy food for consumers.
