Red ginseng is the dry root of Panax ginseng CA Meyer of Araliaceae after streaming[1] which is one of the processed ginseng. Red ginseng contains a variety of rare ginsenosides such as ginsenoside Rg3, Rg5, Rk1which has significant pharmacological activity. In order to improve the content of the rare ginsenosides, with the use of strain Rhizopus nigricans, the biotransformation of decoction of red ginseng was been conducted. Mycelium biomass, as an index, the optimum fermentation conditions could be obtained as the use of single factor experiments and orthogonal experiment:medium concentration was15g/100mL, temperature was26℃, revolutions was120r/min, and fermentation period was six days. The study that improvement of memory activity of fermentation product showed that:compared with the Piracetam, Rhizopus nigricans fermentation product group had a significant memory enhancement activity, and its activity was higher than a single red ginseng decoction.Rhizopus nigricans fermentation products were detected by high performance liquid chromatography, with the mobile phase was acetonitrile and water binary gradient elution.(acetonitrile percentage)0-5min:5%;5-10min:20%;10-15min:20%;15-40min:50%;40-50min:70%;50-60min:90%;60-70min:5%. Compared to standard substance and peak area calculation, after biotransformation, the contains of ginsenoside Re, Rc were significantly reduced; the peak area of S and R-type ginsenoside Rg2was interactly transformed, and the contains of ginsenoside Rg3、Rg5and Rkl was rosen, which had memory improvement activity, accoding with the pharmacological experiments conclusions. By means of detection of LD50and acute toxicity of fermentation products, it was concluded that LD50was not been detected, with not discovered any toxic reaction. Compared with blank group, the weight of mice has significant diferences, which can be concluded that fermentation products has facilitation on group.Ganoderma lucidum is well-known as Chinese ginseng erbal medicines, and the polysaccharides of Ganoderma lucidum and ginsenosides have significant effect in enhancing the body immunity. It has been According to the optimum fermentation of Ganoderma lucidum in red ginseng decoction researched, antifatigue activity of ginseng decoction-G lucidum fermentation product was studied.HPLC was used to distinguish varaieties of types of ginsenosides after fermentation. It is showed that the contains of ginsenoside Re、Rc and Rd was obviously decreased As compared with the control group, in either case of low dose (P<0.05) and the high dose (P<0.01) of red ginseng-G lucidum fermentation product could significantly prolong the mice’s swimming depletion time and dramatically reduce the contents of blood lactic acid (BLA). Thus, the red ginseng-G lucidum fermentation product showed obvious antifatigue effects.Ginseng and American ginseng was specially processed, to study memory activties. A preliminary study was that enhance the strength of the memory activity before and after processing, the results show that the sweetened American ginseng, the American ginseng decoction groups have a significant memory enhancement activity (P<0.01), and it provides a reference for further study of the mechanism.
