At the present time the chain supermarkets hold a prompt development, thedeveloping speed and scope snatch the eyeballs of this field. It is well-known thatthe fresh products’ operation management is a key share in the conduct ofsupermarket management.“Food is the first necessity of the people”, fresh productsare the daily necessity concerned to everyone and every family. Of the characters ofthe short shelf life, not easy to store up, while the high frequency purchasing fromthe customers, thus offering the fresh products are a main measure in absorbingcustomer flow in supermarkets. Therefore, the succession of the management infresh products in supermarkets is the succession of the management of thesupermarkets.In supermarkets’ operation processing, the main existing problem is the operationin fresh products. The large wastage amount causes low gross profit or even deficit,thus the supermarkets have to increase other goods’ prices to make up the loss,which bring down the whole competitive strength of the supermarkets. According tothe data from the on-site inquisition on fresh products operation in Xiamen’swell-known X chain supermarket, this paper tries to figure out the most suitablesolution in conducting the operation of the fresh products, and this paper doesresearch and reference the concerned articles on fresh products operation as well.From viewing the aspect of the whole qualifying management, aiming at thecharacters of the difficulty part the conservation and conveyance of the freshproducts operation, focusing on the practical achievements in successful conductingmanagement in supermarkets, this paper tries to solve the problems in fresh productsoperation in chain supermarkets,of which optimization and frame the fresh products’procurement, transportation, conservation, production, processing and distribution,stress on the studying in lowering the wastage in distributing which not only increasethe profit of the supermarkets but also satisfy costumers’ shopping expectationtoward superior quality and low price fresh products.
