In the light of food safety regulatory requirements of major events in Jiangsu and the food safety needs of the 2nd Asian Youth Games and the 2nd Youth Olympic Games, Local Food Safety Standard—Carried Standards and Applicable Principles of Catering Service Food Safety for Asian Youth Games and Youth Olympic Games is included in the project of Jiangsu 2012 local standards on food safety.The formulation of Jiangsu Local Food Safety Standard—Carried Standards and Applicable Principles of Catering Service Food Safety for Asian Youth Games and Youth Olympic Games is in line with Food Safety Law of the People’s Republic of China and relative regulations. The technical requirement of this standard was defined after analyzing food safety rules and regulations, national standards of GB 2760, GB2762 and GB 2763, studying the existing national and industrial norms, answering the needs of food safety regulation over major events like Asian Youth Games and Youth Olympic Games, adopting food safety risk analysis theory and taking into consideration of the chemical substances and microbial contamination that will impact raw material, semi-finished or finished products, risk factors of physical, chemical and biological contamination in manufacturing process and key link requirement of raw material procurement control, producing process and use of food additives. During the process of setting the standard, relative international and domestic norms were collected and studied, opinions from experts and enterprises were followed, technical indicators were confirmed through enterprise visits, data accumulation and data comparison and 95 batches of samples were verified. Advices were asked for either in meetings or written forms from engaged personnel, test departments, supervision departments, producing enterprises and catering units and came into form after modification, supplement and improvement. The standard was authorized by Jiangsu Department of Health as Jiangsu Local Food Safety Standard-Carried Standards and Applicable Principles of Catering Service Food Safety for Asian Youth Games and Youth Olympic Games.The content of Jiangsu Local Food Safety Standard- Carried Standards and Applicable Principles of Catering Service Food Safety for Asian Youth Games and Youth Olympic Games includes ranges, normative references, applicable principles, carried standards, food classification system, labels related to food safety, identification requirement, forbidden food and raw material list, food and raw material list used with caution and the limited amount of ready-to-eat food.During the Asian Youth Games and Youth Olympic Games, the food safety supervision departments of Jiangsu Province and Nanjing Municipality made overall regulation on all the food provided for the games according to the Standard, which attested the effectiveness of the Standard.
