In recent years, with people’s life level of consumption and economic growth continuously improve. Food is what matters to the people, the food security problem is not only related to the health of consumers, but also affect the comprehensive competitiveness of agricultural products. Consumers demands on food quality and safety of higher and higher on the present situation, and the question is becoming more and more attention. However food safety events but emerge in endlessly, as the main body of food consumption, consumer interests and food safety problems closely related. Each had a food safety events will be on consumer behavior produce certain effect, consumers will be affected by the influence of related events and change their consumption behavior. But the vast number of consumers to food safety issues are not the same, different classes of extinction。Therefore, this paper explains the food safety, food safety cognition, the meaning of food consumption behavior, and summarizes the food safety incident, our state’s present based on food safety cognitive food consumption behavior of the present situation and the characteristics of food consumption behavior, general model and influencing factors; Through the questionnaire investigation and analysis of the main city of Hunan province consumer food safety cognition and the relationship between food consumption behavior.First of all, the author summarizes the characteristics of consumers’behavior for food:(1) time limit sex;(2) the universality,(3) the high quality sex;(4) regional;(5) times the otherness;(6) age structure difference.Secondly, through the questionnaire survey analysis, the food safety problems get of consumer attention, but still the existence of food safety problems cognitive level is low, the safety of food identify sexual problems such as weak.At last, from the results of the survey of acknowledge that consumers on the safety of food cognitive level is mainly affected by gender, education level, on the safety of food trust degree and so on factors, women groups, have a good educators, is engaged in the food safety industry group common on the safety of food cognitive level than other groups is higher.
