Therefore, lower serum cholesterol level is directly related tohuman health, is currently the focus of scientific research work. And a large number of researchfindings, Lactobacillus plantarum fermented food and the human body can reduce serumcholesterol. Therefore, the research has important implications for high cholesterol Lactobacillusplantarum powder production and research and development of plant lactobacillus capsule.This study is based on the breeding and preservation Laboratory of Lactobacillus plantarumM1-UVs29as experimental material, technology of the strain producing bacterial powder andsoft capsule for the production process, through the analysis of Lactobacillus plantarum powderoptimization of vacuum drying composite protective agent to prepare the high number of viableresponse surface; the best ratio of soft capsule preparation process of Lactobacillus plantarumpowder and refined soybean oil and beeswax and soybean phospholipids was determined byorthogonal experiment; research ability of Lactobacillus plantarum M1-UVs29degradation indifferent conditions of cholesterol. The main results are as follows:Plant lactobacillus preparation recipe bacteria powder by vacuum drying protective agentoptimization: glycerol7.59%,2%ascorbic acid, monosodium glutamate2%,1%,16.52%L-cysteine trehalose, sucrose6%, skim milk powder44.40%,10%corn starch, corn flour10%.Vacuum drying protective agent this formula can make the cell survival rate reached75.97%, and the predicted values are close to. The production can be based on the actual overallconcentration of bacteria concentration adjustment formula.Lactobacillus plantarum M1-UVs29has the ability to degrade cholesterol is very good, butis affected by many factors. Including the addition of cholesterol, bile salt quantity and speciesnumber. When the cholesterol content in50~400ug/mL, bile salt content is0.2%, cholesteroldegradation rate increased with the content of cholesterol, the degradation rate constant. Whenthe bile salt content is0.1%~0.5%, cholesterol content is100ug/mL, Lactobacillus plantarumM1-UVs29has good degradation effects on cholesterol, bile salt tolerance is better. When thebile salt content is0, cholesterol did not change. When the bile salt content is more than0.5%,cholesterol degradation rate decreased sharply. Bile salt tolerance at this time has reached amaximum of Lactobacillus plantarum M1-UVs29. Lactobacillus plantarum M1-UVs29criticalcontent of cholesterol degrading bacteria106cfu/mL, content to show the physiological functionof the best is2×108cfu/mL. The plant lactobacillus M1-UVs29strains with cholesterol reducingability of stable.through orthogonal test to determine the best ratio of Lactobacillus plantarum soft capsulecontent: beeswax content3%, Lactobacillus plantarum powder: refined soybean oil as1:3,phospholipid content of soybean is4%.
