Panax Ginseng C.A. Meyer is a species of genus Panax (Araliaceae) which spread chieflyin Asia countries such as China, South Korea, North Korea and Japan. It originally cultivated inChangbai Mountain, China, and has an application history of more than4000years. The majorginseng producing area ranges within40°~44°north latitude and33.7°~43.1°eastlongitude. Korean ginseng is conspecific with Chinese ginseng and their usual names differ justbecause they are growed in different countries. Korean ginseng can be used in the food industryin Korea long before and made into various foodstuffs and makeup, bringing enormouseconomic benefit. Panax Ginseng C.A. Meyer is admitted to be a new resource food in2012inChina, which brings about great opportunities to Jilin’s ginseng industry.This study mainly studied the quality standard and analysis technics of ginseng used asnew resource food. Analyzed the ingredients of ginseng with different growing areas and ages.Ingredients analysis: Analyzed the ingredients of ginseng of4years old and5years oldwhich are growed in Fusong, Tonghua, Wangqing and Dunhua respectively. The mainingredients are8elements (Na, Mg, K, Ca, Fe, Cu, Zn, Se),11monomer saponins (R1、Rg1、Re、Rf、Rh1、Rg2、Rb1、Rc、Rb2、Rd、Rg3), relative nutritious indexs (total saponins,polysaccharides, volatile oil, total flavonoids, lignins, amino acids and polypeptides.The study examined21hygiene indexs (moisture, ash, As, Pb, Hg, Cu contents, etc.) ofJilin ginseng (Tonghua, Baishan, Yanbian).3months accelerated stability test was alsoconducted taking these21items as inspection. The draft quality standard of new resource foodginseng was established.The results showed:(1)5years old Jilin ginseng has higher contents of11monomer saponins, total saponins,polysaccharides (1.08times), amino acids (1.18times), polypeptides, mineral elements,volatile oil (1.19times), total flavonoids (1.21times) than4years old ginseng.(2) The lignins content of ginseng growed in the same area varies, while it decreases as ginsenggrows.
