As the development of economy and the improvement of people’s living standards grow, people would like to care more about the food health, nutrition, and reasonable when they eating. Food not only means what makes us stay away from hungry, but contains higher quality that we need to invigorate our health effectively. Nowadays, food safety is so important to us. Guaranteeing the quality and safety of food is becoming the foundation of protecting people’s health, improving the life quality, promoting food trade worldwide and maintaining the peace of the world.The catering industry is the last link of the food safety supervision, and there are many problems in this link. In recent years, as the high incidence of foodborne diseases influences, people pay more and more attention on these food problems. In our country, the food safety supervision of catering industry is hard to carry out because of the incompletion of laws, the lacking of law enforcement, the old tools, the poor conditions of restaurants, the low quality of the stuff, and the lacking of hygiene awareness, etc. It becomes the most important mission of improving the supervision of food safety in catering industry by solving these problems.Throughout the world, there are laws for ensuring the food safety supervision in many countries. Based on different situations of food safety in different countries, there are different tools of supervision. For example, there are several ways to carry out the supervision, such as the law tools and government administrative tools. And the European countries are using one more tool than Untied States, which is industry and commerce administrative tool. Under the circumstance of food safety, there are many problems in using the tools of supervision in the catering industry food safety. In this paper, the author has investigated the tools of supervision work, which are law tools, government administrative tools and social participation tools, and analyzed the insufficiency of these tools, then put forward several feasibility suggestions to improve the system of food safety supervision in our country.First of all, this paper states the background, meaning, purpose, methods and content of the study, and introduces the situation of the supervision of food safety in and outseas and the research progresses in this field. Secondly, the author has defined the core conception of food safety, supervision of food safety, government administrative tools; summarized the situation of food safety supervision in catering industry of domestic, the subject and object of supervision, and organization management system. This part focuses on the supervision tool mentioned before using situation of food safety supervision in Xiyi city, analyses the problems and causing factors in using these supervision tools, and puts forward the strategies and suggestions of improving the food safety supervision in catering industry. This paper elaborates and analyses the problems in the using of supervision tools by theories and cases, it would help to improve and perfect the law of food safety supervision tools in catering industry, built the supervision system with clear division of rights and responsibilities, exercise the right of public opinion and supervision, and guarantee the food safety in catering industry in our nation.
