With the changes in the structure of food consumption, the fresh, high quality foodin cold chain will be demand trends on current and in future. But numbers of thesignificant food safety problems occurred in recent years. It is not only related to everyconsumer, but also is the basis of enterprise survival and development. So consumersand companies have to pay more attention to food safety. Therefore, many enterprisesare facing the problem of how to protect the quality, improve distribution efficiency inthe distribution of fresh products, the establishment of the whole process of qualitycontrol system. In this paper, design the quality of fresh products on distribution basedon Hazard Analysis Critical Control Point (HACCP) and Quality Function Deployment(QFD), to provide a reference to the company’s products and distribution quality control.The main content of this paper is organized as follows:First of all, the paper elaborates this research background. On the basis of theanalysis of the fresh products quality control research in domestic and foreign, theestablishment of the purpose and meaning of the study, states the ideas and the mainresearch content.Secondly, the paper elaborates the definition and characteristics of the freshproducts, cold chain logistics and its principles. And in-depth analysis of thedistribution of fresh products, quality control, features, principles and elements.Then, the paper builds the process model of fresh products quality control indistribution based on the HACCP and QFD. On this basis, the model of quality controlsystem of fresh products distribution based on the HACCP and QFD is presented.HACCP was used to control the quality of the delivery of fresh products. And usingQFD improves quantitative of the HACCP when develops measures. It enhances theoperability and targeted measures. Meanwhile, The assessment of the newly-establishedquality control system is made from the cost of inputs, technical operations andeffectiveness of the results.Finally, the results of the research will be used in a Chongqing Food Co. Ltd..Theresult verifies the feasibility and effectiveness of the research results.
