Scientific development makes a wide variety of chemicals, additives are constantly emerging, with food production and processing, sales willfully adulteration of fraud, harmful pollution caused by violations of people’s lives and health events occurred frequently, so that food quality safety development has affected the social progress and human health problems, become the global important issue. Safety as the basic attribute of food, with food production, management and quality management are closely related, the increasing of people’s living standard and self-protection awareness is growing today, people on food quality safety increasingly high demand, therefore, how to build scientific and reasonable, effective food safety management system become a hotspot in the world.The frozen food production enterprises of the food safety management system as the research object, the basic concept and theory on the basis of review, on food safety and quality management system model were studied, and the production of quick frozen food enterprises food safety status of the investigation and analysis, according to YZQZ company’s actual situation, according to the standard of HACCP on the food safety management system construction and operation are discussed, through the production process each link undertakes endangering an analysis, determine the key control points, to help enterprises improve product quality, for the production of quick frozen food enterprises food safety management to provide reference.
