In recent years, aquatic product quality problems which happen frequently hit theconsumer confidence and have a negative impact on the production, consumption and exportsof aquatic products. In order to improve this situation, It is far significant to establish acomprehensive quality risk management mechanism in the aquaculture industry. So this paperfocus on the quality risk of aquatic supply chain and proposes an aquatic product quality riskmanagement approach with integrating a variety of economic management tools, which ishelpful for the establishment and improvement of the management system of quality risk ofaquatic supply chain to a certain extent.This paper starts discussion from three aspects of the quality risk recognition, quality riskassessment and quality risk control. The specific research results are as follows:(1)The establishment of comprehensive evaluation index system of aquatic supply chainquality risk. First, analyze the operation processes of the aquatic supply chain under farmingsupermarket docking; then, identify the quality risk issues of aquatic products in tilapiaexample with value-focused process engineering (VFPE); finally, build a quality riskcomprehensive evaluation index system based on the recognition results.(2)The establishment and application of the quality risk assessment model of aquaticsupply chain. First, make use of triangular fuzzy numbers to quantize the hazardous of riskand the probability of risk, and adopt the center of gravity method to achieve a defuzzificationrisk worth; then, build the model of group decision-making expert weight based on maximumentropy and relative entropy theory. And the model is solved by the particle swarmoptimization (PSO) with competition mechanism and mutation mechanism; finally, empiricalanalysis shows that the upstream and downstream enterprises in the supply chain both need toimprove the situation of quality risk.(3)The establishment, analysis and application of quality risk control coordination modelof aquatic supply chain. First, build the supply chain coordination model to consider thequality parameters based on "farming supermarket docking" and the principal-agent theory;then through the Karush-Kuhn-Tucker (KKT) to analysis the earnings, the best level of quality assurance and investment scale under different capital position. Then, empiricalanalysis shows that the income and quality level of breeding base or supermarkets are greaterthan the low investment funds. The simulation results show that the level of quality assuranceis positively correlated with its own sales prices, the level of sales quality testing, the level ofquality assurance of collaborative enterprises, the product freshness sensitive coefficient and asingle batch of product sales time. And it is negatively correlated with price-sensitive. Finally,according to this conclusion this paper put forward corresponding quality control strategy.
