The economic of country is rapidly developing, but the size of its role is different in consumption, investment, net exports carriage role in stimulating economic growth. Our government continue to increase investment, but the Chinese residents of domestic demand is insufficient, consumer role to play in stimulating economic growth is not obvious, this phenomenon is more evident especially in the vast rural areas. Food expenses account for a large proportion in the living expenditure of rural residents, so a surey on food consumption behavior of rural residents have an important role in the overall consumer spending for the expansion of rural residents. It is of great significance for pulling China’s economic growth by investment mainly transition to relying on consumer-driven pattern.This paper is on the basis of the analysis and literature related to the economic theory of consumer science on and a lot of statistical data and field survey, and use empirical descriptive analysis and linear regression analysis method, respectively analysis changes in the structure of the existing food consumption of rural residents and rural residents’food expenses influencing factors and draw the relevant conclusions and recommendations. It is of great significance for a reasonable allocation of food production and distribution, promoting food consumption benign development and stimulating economic growth.This paper is divided into six chapters. The first chapter is the introduction, including research background and significance of the research purpose, content and technology roadmap, research methods, research innovation and shortcomings. The second chapter is the theoretical basis and literature review, analysises and comments scholars’correlational researches before, and put forward the theory can be carried out to support this paper. Chapter3takes use of Rural Statistical Yearbook data analysis of the rural household food consumption behavior. This chapter discribe the changes in food consumption level of rural residents and food consumption structure, the changes in food consumption level of rural residents, including changes in food consumption expenditures and the Engel coefficient changes. The fourth chapter uses the field research data to analysis A county rural household food consumption behavior. Firstly introduces A county from the three aspects of the geography, culture and economic, next we have descriptive statistical analysis from A county rural household food consumption level status and food consumption structure change two aspects. As a core part of this article, Chapter5major analysis of the factors that affect A County rural residents’food expenses, including five parts:variable selection and description, model selection and description, data description, measurement results, the measurement results. By using the linear regression equation model, we measured the whole year to significantly affect food consumption expenditure of rural residents factors. The sixth chapter is the conclusion and recommendations. Through the analysis of the full text, we draw the following three conclusions:food consumption expenditure of rural residents is growthing slowly, but the proportion food expenditure accounts in the living expenditure is declining rapidly; rural residents’food consumption expenditures and food consumption structure change varied in different stages characteristics; annual income, family size, the number of land blocks are the main factors affecting food consumption expenditure of rural residents. According to the conclusions of this study,we recommendations from three aspects which is to increase the income of rural residents, to optimize the structure of agricultural products, improve the social security system.
