The oil extracted from peony seeds is a new pattern of edible oil resource, in recent years, which is paid widely attention by a large proportion of consumers because of its excellent characteristics of nutrients. This sort of new pattern edible oil resource possesses endless market development potential, whose composition and proportion of fatty acid determine its nutritional value, especially high quantities of ω-3 fatty acids, given the peony seed oil unique nutritional value. In the research, the test material is Paeonia ostii seed. This test mainly focused on the extraction process optimization of peony seed oil, gas chromatography of fatty acid, mineral elements content and the optimization of microencapsulation preparative technique etc., which provides a reference for comprehensive utilization and development of Peony used in oil. The main conclusions are as follows:(1) On the basis of the physics properties of grease, oil extraction rate, extraction efficiency, the change of oil storage quality and other indexes, the study judges and weighs the advantage and disadvantage of the mechanical crushing method, the method of organic solvent extraction and the way of ultrasonic assisted extraction. The comprehensive comparison results are: ultrasonic assisted extraction method > organic solvent extraction method > mechanical crushing method. Therefore, according to the research, the ultrasonic assisted extraction is a better method of peony seed oil extraction.(2) After compared the effect of various organic solvent extraction, the study shows the petroleum ether(boiling range 60~90 ℃) is the optimal extraction solvent. With the craft optimization of Peony Seed Oil in organic solvent extraction method, the research suggest that the leaching time of 2.5h, the leaching temperature is 65℃, the ratio of seed to solvent is 1:5(g/mL). Under such process conditions, the peony seed yield efficiency would be 34.26%.(3)After optimizing the ultrasonic-assisted extraction of peony seed oil process, this research shows that the ultrasonic processing time is 60 min, the ultrasonic temperature is 50℃, the ultrasonic power is 300 w and the ratio of seeds to solvent is 1:6(g/mL). Under such process circumstance, the peony seeds yield efficiency would be 36.72%.(4) After the gas phase analysis of the peony seed oil fatty acid composition, the study suggests its key components are: 58.3% of Linoleic acid, 27.1% of Linoleic, 5.8% of Heptadecanoic acid-methyl ester. Among the components, there are abundant Linoleic acid, oleic acid and linoleic acid in Peony Seed Oil, which are a total of 85.47%, and the unsaturated fatty acid content could be as high as 90%. Therefore, Peony Seed Oil is a kind of high quality health edible oil resources with plentiful ω-3 fatty acid.(5) Based on the detection of mineral elements of peony seed oil, the study concludes that the highest macro element in peony seed oil is Ca, which is 153.61 mg/Kg. And the comparatively high trace elements are Fe, which is 54.82 mg/Kg Cu is the lowest one, which only 0.820 mg/Kg. is In addition, the content of Pb, Hg, As, Cr, Cd and other harmful heavy metal elements are under the national standard GB / T 5009-2003 which is about the Heavy Metals standards(0.02 mg/Kg) for edible oil. Hence, the peony seed oil contains a variety of major elements and trace elements, and the heavy metal analysis shows that it is safe to eat, that is to say it can be used as a new kind of cooking oil resources.(6) Optimizing spray drying process for the microencapsulation of peony seed oil process: proportion of wall materials(β-cyclodextrin, Arabic gum and soya bean protein) is 3:1:2, the embedding time is 120 min, the wall and core portion is 7:1, and the amount of emulsifier(glycerin monostearate) is 0.2%. Under the above condition, the embedding rate of microcapsule preparation would be 82.4%, which lays a foundation for the further industrial development of the peony oil products.
