Grape is the second largest fruit in the world, the development of nutrition and functionalization grape products, and the circulation processing and comprehensive utilization of by-product are the focus in the food processing. Therefore, in this study, LongYan grapes purchased from Shaanxi Baoji were used as basic raw material. The best process parameters for the extraction of grape seed oil and resveratrol were optimized and the microcapsule based on these two kinds of active substances was prepared. The research results obtained in this study can not only obtain good social benefits and great economic benefits, but also can realize resource recycling and alleviate the pressure of environmental protection. All of the results were as follows:(1) The response surface method based on the software of Design Expert7.0 and SAS 9.0 were applied to optimize the best process parameters for the extraction of grape seed oil. The results indicate that the best process parameters of the extraction of grape seed oil as follows: the ratio of material to water is 1: 13, the treatment time is 48 min, the treatment temperature is 37 oC and ultrasonic power is 490 W. In this condition, the extraction volume relates is 194.1 mg/g. At the same time, the extracted grape seed oil exhibit good oxidation resistance.(2) The response surface method based on the software of Design Expert7.0 and SAS 9.0 were applied to optimize the best process parameters for the extraction of resveratrol. The results indicate that the best process parameters of the extraction of resveratrol as follows: the concentration of ethyl alcohol is 80%, the ratio of material to water is 1: 20, the treatment time is 56 min, the treatment temperature is 55 oC and ultrasonic power is 420 W. In this condition, the extraction volume relates of resveratrol is 74.6 μg/g. At the same time, the extracted resveratrol exhibit good oxidation resistance.(3)The microcapsules based on grape seed oil and resveratrol were prepared and the content formula was studied, the best process parameters was established for the microcapsules preparation. The results indicated that the content of grape seed oil is 89%, resveratrol is 1% and surface active agent is 10%. After that, on the single factor of increasing embedding rate of microcapsules was studies to determine the key factors and orthogonal experiment based on the software of DPS were applied to optimize the best process parameters. The results indicate that the best process parameters as follows: the concentration of sodium alginate is 3.0%, calcium chloride is 3.0%, chitosan is 2.5%, the ratio of wall material to core materials is 1:3. In this condition, the embedding rate of microcapsules is 91.7%.
