Grape is one of the most popular fruits in the world,and China is the country with the highest yield of grape in the world.Fresh fruit grapes are not suitable for long-term storage,so most of the grapes are used to make wine.Grape seed and grape skin residue are by-products of wine grape.Through the study of grape seed,it is found that grape seed is rich in oil,mainly unsaturated fatty acids,but also contains a variety of other nutrients,such as vitamins,alcohol,polyphenols,which has high utilization value.In this paper,grape seed oil was studied,including the extraction process,refining process and the detection of effective components,to provide the basis for the extraction and development of grape seed oil.In this paper,two methods were used to extract grape seed oil:pressing method and supercritical carbon dioxide extraction technology(SFE-CO2).Comparing the two kinds of extraction oil,SFE-CO2 extraction oil is not only higher than the press method in oil extraction rate,but also better than the press oil in physical and chemical parameters.Therefore,SFE-CO2 extraction oil is selected for refining process.The refining process of grape seed oil includes degumming,deacidification,decolorization,deodorization and dehydration.Through single factor test and orthogonal test,the optimal degumming process conditions were determined as follows:50%citric acid was used for acid degumming,the optimal amount of acid was 3%,the optimal amount of deionized water was 7%,the optimal reaction temperature was 80?,the optimal reaction time was 50 min,and the final degumming rate was about 27%;The optimum deacidification process is as follows:alkali deacidification is adopted,the optimum concentration of alkali is 24%,the optimum amount of excess alkali is 0.3%,the optimum reaction temperature is 40?,the optimum reaction time is 40 min,and the final deacidification rate can reach over 99.8%;The optimum decolorization process is as follows:the optimum amount of activated carbon is 3%,the optimum decolorization time is 50 min,the optimum decolorization temperature is 90?,and the final decolorization rate is about 92%.Deodorization and dehydration processes are mixed with other processes.The content of active components in grape seed oil before and after refining was detected.It was found that the content of fatty acid had little change,while the content of ve had a significant increase before refining,and the content of copper,iron and other heavy metal elements after refining was also lower than the national quality standard of edible oil Therefore,it can be concluded that grape seed oil retains nutrients to a great extent in the refining process,and the refining process meets the requirements.
