Hericium erinaceus is a kind of medicinal and edible fungi,nature, has certain therapeutical effects in restraining tumour, ulcer,mutation and radiation, postponing senility, reducing blood pressure, blood sugar and blood fat, protecting liver, improving the ability of the body hypoxia, accelerating blood circulation. Soybean peptide is the degradation product of soybean protein after hydrosis, has physiological functions of reducing blood pressure anti-oxidation, anti-fatigue, immune regulation and promoting the absorption of mineral elements and lipid metabolism.The subject is using soybean meal as raw material, Hericium erinaceus for formentattion strains, and fermented soybean meal on the fermentation process of soybean peptide functional beverage and product characteristics are studied, the main results are as follows:(1) Based on the culture medium and fermentation process optimization, it defined the medium for glucose 2.0%, soybean powder 5.5%, pH 4.5, the volume 200mL/500mL, temperature 28 ℃, fermentation time 8 days.(2) Experiments of anti-fatigue show that,compared with the control, the loaded-swimming time of mice of the high does group of fermentation liquid and the extract liquid of Hericium erinaceus fruiting body from 534 s up to 1025 s and 1069 s; the content of hepatic glycogen of mice from 1.599 mg/g up to 5.272 mg/g and 5.924 mg/g, the serum urea nitrogen of mice from 6.032 mmol/L reduced to 5.286 mmol/L and 5.100 mmol/L. In the blood lactate experiment, each group of lactic acid is no significant difference in comparion with control, however, after the swimming can significantly promote the decline of the content of lactic acid from 2.958 mmol/L up to 5.533 mmol/L and 5.075 mmol/L in 20 min.(3) Experiments of enhancing immune function show that, compared with the model group. The DTH of mice of the high does group of fermentation liquid and the extract liquid of Hericium erinaceus fruiting body can significantly improve, from 0.160mm up to 0.458mm and 0.517mm, both of the experimental group can highly significantly improve the phagocytic index, from 2.674 of the model group up to 4.723 of the low does group of fermentation liquid,4.437 of the high does group of fermentation liquid and 4.851 of the extract liquid of Hericium erinaceus fruiting body. Both of the experiment groups can improve the immune the visceral index (spleen index and thymus index), spleen index from 2.613 mg/g up to 3.462 mg/g,3.841 mg/g and 3.378 mg/g,while thymus index from 0.819 mg/g up to 1.223 mg/g,1.386 mg/g and 1.225 mg/g. Compared with the normal control, both of experimental groups can improve the spleen lymphocyte proliferation, the high does group of fermentation liquid and the extract liquid of Hericium erinaceus fruiting body can significantly improve the spleen lymphocyte prolifeiation,from 0.057 of control group up to 0.186 and 0.225,and both of experimental groups can improve PMΦ phagocytic ability of neutral red of mice, from 0.303 of control group up to 0.348,0.336 and 0.334.(4) Experiment of prevention of gastric ulcer by anhydrous ethanol show that, the ulcer index of experimental groups are lower than that of the control group, and the high does group of fermentation liquid and the low does group of extract liquid of fruiting body can highly siginificantly reduce the ulcer index, reduced to 5.233 mm2 and 6.313 mm2 from 15.277 mm2, what’s more, the ulcer index of the high does group of fermentation liquid,5.233 mm2 has siginificance,compared with 12.366 mm2 of the positive control group (Hericium erinaceus gastrointestinal health oral liquid of Apollo Group).
