DHA and ARA as two important unsaturated fatty acids, with a variety of physiological functions, is essential for early infant growth and development. Since these two highly unsaturated fatty acids are prone to oxidation, in infant formula milk by adding these two substances it has been a problem. This study attempts to whey protein- lactose composite material as the wall of DHA and ARA oils were embedded, so instead of the traditional production process of the powder is added directly to infant formula milk powder, improve the sensory quality of the product, so Infant formulas containing DHA and ARA milk better stability, longer shelf life, while saving production costs.The first project using three different types of WPC80 as the wall material, DHA and ARA oil as core material, after emulsification embedded, choose the appropriate model by detecting the particle size and surface oil approach. Then study the application of single factor test the effects of emulsification process conditions on product stability, and further to the emulsified particle size of stability indicators, flow homogenizer, homogenizer opening and the mixing temperature of the three emulsion Process parameters are three factors and three levels of response surface optimization test, and finally adding a comparative analysis of the oil with DHA and ARA infant formula milk powder two storage stability.The results showed that: Model WPC8200 whey protein- lactose composite wall material as embedding can improve emulsion stability, response surface analysis showed that the degree of opening homogenizer is the main factor affecting the particle size after homogenization, optimized The optimum conditions for the homogenizer flow 1.50 t / h, a homogenizer opening is 48.00%, compounding temperature was 37.32 ℃. Verification results show that the average particle test measured three times as 0.5013, 0.4996 and close to theoretical predictions, indicating that the best response surface optimization emulsion obtained is accurate and reliable, according to the model of emulsified test is feasible in practice. Adding DHA and ARA oil samples relatively stable during storage than adding DHA and ARA powder stability is better, longer shelf life, description by adding DHA and ARA oils are ways to make infant formula milk powder with more good storage stability.
