Modern fast food is the social economic development and people’s living needs, is the progress of industrial civilization and the outcome of modern civilization, although has great market potential, but also has a deep challenges and problems. Now, the modern fast operating standardization, distribution factory, chain scale, and scientific management idea, after from research to practice the process of deepening, widely accepted and identity, and become China’s Chinese modernization and catering industrialization of important development goals and direction. At present, Shanghai production enterprises are packed nearly17home, and verification supply quantity10,000population/once more insufficient10home. How to improve production efficiency and packed dishes of varieties of taste, it is lunch box production enterprise is the key.This paper by baosteel catering no.3production line for study, with the practical problem illustrates production for continuous improvement ideological significance. Paper main content as follows:(1) introduced to choose a background and meaning, the research content, idea and method.(2) introduces the application to the related principles and methods, including: the management of "5S" management and housekeeping management, program analysis process program analysis.(3) from site facilities layout of this production line present situation and problems of realism, makes a detailed analysis and application "5S" management and housekeeping management theory on the facility decorate the reasonable improvement.(4) application procedure analysis method to workers’ operation flow field records, using5W1H technical questions, analysis, redesigned the new operating process, so that workers order of operations is more reasonable. (5) to improve plan effect evaluation, will improve the before and after each index of the comparison and analysis. After improve workers take shipment and assembly food process ambulate distance reduce, operation more convenient, improving efficiency, reduce labor intensity of the people.This article is in the company’s first conducted the research, the research process and methods of baosteel catering company other lines of improvement is a kind of reference.
